    You will need the following ingredients:

    • 8 slices of rye bread
    • 1 pound of thinly sliced corned beef or pastrami
    • 1 cup of sauerkraut, drained
    • 8 slices of Swiss cheese
    • 1/2 cup of Russian or Thousand Island dressing
    • 4 tablespoons of unsalted butter, softened

    Instructions

    1. Preheat a griddle or large skillet over medium heat.
    2. Spread the Russian or Thousand Island dressing on one side of each slice of bread.
    3. On four slices of bread, layer the corned beef or pastrami, sauerkraut, and Swiss cheese.
    4. Top each sandwich with the remaining slices of bread, dressing side down.
    5. Spread the softened butter on the outside of each sandwich.
    6. Place the sandwiches on the griddle or skillet and cook until the bread is golden brown and the cheese is melted, about 3-4 minutes per side.
    7. Serve hot and enjoy!
